Preparation method
- In a bowl, place 250g of granulated tapioca, a pinch of salt and, to hydrate, pour in 250ml of boiling whole milk.
- Mix well and let it hydrate for 15-20 minutes.
- After this time, add the eggs, 1 teaspoon of butter or margarine and a pinch of salt.
- Then, knead well with your hands until the tapioca is loose.
- Add 200g of grated mozzarella and once again, knead well with your hands, obtaining a homogeneous dough.
- Next, wash your hands and, using a tablespoon, take a portion of the dough and shape it into balls, flattening them slightly.
