How to make fit bread

For the healthy bread recipe, we will put the cassava pieces in a pressure cooker with cold water and, if desired, add salt. We will close the pan with the lid and when it reaches pressure, we will count 7 minutes of cooking. Let's turn off the heat, carefully release the pressure from the pan and remove it from the water, waiting for it to cool a little. Once the cassava is warm, we will mash it with a fork, on a clean flat surface, to develop the starch and gain elasticity. Ingredients for the fit bread recipe

  • 1 kg of cassava 
  • 1 tablespoon salt (optional)

Preparation method

  1. Add the cassava pieces to a pressure cooker with cold water and, if desired, add salt.
  2. Cover the pan and after it reaches pressure, set the cooking time to 7 minutes.
  3. Turn off the heat, carefully release the pressure from the pan and remove from the water, allowing it to cool.
  4. With the warm cassava, mash it with a fork on a clean surface. This way, the dough will become elastic and develop the starch.
  5. Using a spatula, scrape the mashed cassava off the counter and return it to the pile, mashing it further with a fork. Repeat this process until you obtain a smooth dough.
  6. Then, line the counter with a clean piece of plastic and take portions of the dough, then form balls with your hands.
  7. Set these balls aside on top of the plastic and cover with another one while you shape them, so they don't dry out too much.
  8. Once the balls are ready and placed between two sheets of plastic, flatten them with a plate to make them thin. If desired, roll them out in the same way with a rolling pin.
  9. Heat a non-stick frying pan over the heat, let it toast on one side and then turn it over to toast on the other.
  10. Transfer to a plate and set aside. Do this with all the balls you shaped.
  11. Fill as much as you like, according to your preference, or enjoy your fantastic fit bread naturally!
