  1. In a frying pan, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic and sauté until soft and lightly browned.
  3. Add the chopped tomatoes and dried oregano to the pan and cook for about 10 minutes, stirring occasionally, until the tomatoes break down and form a thick sauce.
  4. Season with salt and pepper to taste and remove from heat.
  5. Transfer the sauce to a serving container and garnish with fresh basil leaves.

Passion fruit sauce:

Ingredients:
  • Pulp of 3 passion fruits
  • 1/2 cup of water
  • 1/4 cup sugar
  • 1 lemon juice
  • 1 teaspoon of cornstarch dissolved in 2 tablespoons of water
Instructions:
  1. In a pan, place the passion fruit pulp, water and sugar.
  2. Place over medium heat and boil, stirring occasionally, until the sugar has completely dissolved.
  3. Add the lemon juice and cornstarch dissolved in water, stirring constantly, until the sauce thickens.
  4. Remove from heat and let cool completely.
  5. Transfer the sauce to a serving container and refrigerate for at least 30 minutes before serving.
  6. Serve chilled with the barbecue meat and enjoy the sweet and acidic contrast of the passion fruit sauce.
