How to make pan pudding

For the pan pudding, we will start by preparing the syrup, following the step-by-step instructions. Let the syrup cool and make the pudding by placing the condensed milk, milk and eggs in a blender. Blend for one minute. Next, pour the syrup into a mold with a hole in the middle that fits in a pressure cooker and pour the pudding mixture into it. Add a little water to the bottom of the pressure cooker and place the mold in it, making sure it is well-arranged. Cover the pan and cook for 15 minutes after it reaches pressure. Ingredients for the pan pudding recipe

For the syrup

  • 2 tablespoons vinegar 1 cup sugar
  • 100ml cold water + 70ml room temperature water

For the pudding

  • 1 carton (measure) of whole milk
  • 1 can of condensed milk (395g)
  • 4 whole eggs

The cup size is 250ml.

Preparation method

From the syrup

  1. In a pan, place the sugar, add 100ml of cold water, add the vinegar and stir.
  2. Bring to a high heat and do not stir anymore, but watch.
  3. When it reaches a caramel color, carefully add more water at room temperature, stirring a little more.  
  4. Turn off the heat and set aside to cool.

From the pudding

  1. First of all, see if you have a mold with a central hole that fits inside the pressure cooker, you will use it to bake the pudding. If you don't have one, you will need 
  2. In the blender, add the condensed milk, the same amount of milk and the eggs.
  3. Then beat for 1 minute.
  4. Pour the cooled syrup into the mold with a central hole and tilt it, spreading it well on the sides and in the center.
  5. Pour the pudding mixture into the mold. If you like your pudding smoother, strain it through a sieve. If you like it with holes, do not strain it.
  6. Add water to the bottom of the pressure cooker, place the pan in it, cover the pan and place over high heat.
  7. Once it starts to pressurize, count 15 minutes and turn off the heat.
  8. Let the pressure release naturally, open the pan, remove the pan and unmold.
